Citrus and Pepper Marinated Ahi Tuna Scented with Star Anise

1 pound - Ahi Tuna #1+
6 ounces - Salt
4 ounces - Sugar
2 ounces - Black Pepper, freshly cracked
2 ounces - Sambuca or other anise flavored liquor
1 each - Zest of Lime
1 each - Zest of Lemon
1 each - Zest of Orange


  • Marinate the Ahi Tuna in the Sambuca for 15 minutes.  Then cover the Ahi Tuna with the above listed ingredients overnight.

  • After marinating overnight, the Ahi Tuna will release a lot of liquid.  Make sure to rinse off the salt mixture thoroughly.

  • Cold Smoke the Ahi Tuna for 10-15 minutes

  • Slice and serve with julienned carrots, zucchini and celery.
