Aspic of Wild Berries in Port Essence

3 cups - Water
3 cups - Port Wine
2 cups - Sugar
1 1/2 ounces - Gelatin
1 each - Apple
3 each - Cloves
1 pint - Wild Mixed Berries


  • Combine water, port wine and sugar and bring to a boil.

  • Add in the gelatin and allow the mixture to come to room temperature.

  • Place the fruit in the mold and fill the liquid 1/2 way up the fruit and allow to chill.

  • When the aspic has chilled, fill the rest of the mold. This will allow the fruit to remain on the top when it is turned out of the mold.
