Chicken Dip

Ingredients

1 - Whole chicken, cooked and shredded
3 - Small cans of cream of chicken soup
4 - Blocks of creamed cheese
1 - Small can of diced green chilies
1 - Small can of diced jalapeños. For a spicy flavor, 1 jar of sliced jalapeños, juice and all
1-½ tsp. - Salt
1 tsp. - Freshly ground pepper
½ cup - Extra virgin olive oil

Preparation

  • Place all ingredients in a crock pot.

  • Turn on high for 1/2 hour.

  • Stir and turn down to low.

  • Serve hot with tortilla chips.

Try making your own tortilla chips.

Cut corn tortillas into 8 triangles or wedges.
Pour oil to a depth of 1 inch into a heavy skillet.

Heat to a temperature of 375 F over medium heat.

Drop the tortilla wedges into the hot oil in batches and cook for 1 to 2 minutes, or until they turn golden.
Drain the oil from the chips on paper towels.

Let the chips cool and store them in an airtight container.
